Kale and Avocado Chocolate Pudding
Welcome to this week’s #notjustagarnish recipe! Today we’re trying something a lil different, and going for dessert! This chocolate pudding is secretly full of kale microgreens and avocado.
Kale microgreens? And avocado? In a dessert? You must think we’re crazy. And maybe we are, a little bit….but just a little! And trust us, you can’t even taste the veggies in this pudding.
Prep time: 20 minutes
Yields: 2 servings
1/2 cup kale microgreens
1 ripe avocado
1/4 cup coconut milk (or other type of mllk)
1 tsp vanilla extract
1 cup cocoa powder
1/4 cup creamy peanut butter
3 medjool dates
2 tbsp maple syrup (or other sweetener, ie honey, agave, etc)
In a food processor, blend avocado and microgreens until completely smooth - fair warning, it may take a few minutes and require a strong blender!
Add in milk and vanilla extract, and slowly, while mixing, add in cocoa powder. Blend until smooth and a dark, chocolatey color. If the mixture doesn’t look like chocolate, add more cocoa powder.
Add in peanut butter, maple syrup, and pitted dates. Blend again until completely smooth.
Taste - add more cocoa, peanut butter, and/or sweetener if desired.
Top with whipped cream, peanut butter, and cocoa and enjoy!
