Veggie Egg Bagel

In today’s recipe we use a microgreen herb mix to make a yummy breakfast sandwich. Packed full of protein and greens, this nutritious loaded bagel is the perfect start to your day.

Prep Time: 15 minutes
Yield: 1 serving

2-3 large eggs
Salt, Pepper
1 cup Microgreen Mix - we used borage, lemon basil, and micro carrot, but you can add whichever micros you choose!
1/8 cup chives
1/3 cup shredded cheese (optional)
1 tablespoon butter

In a large mixing bowl whisk eggs with a dash (<2 tbsp) of water and generous salt and pepper. Add in chives, microgreen mix, and cheese.

Heat a large skillet over medium-heat. Once the pan is warmed, add 1 tbsp butter and coat pan. Add egg mixture. Keep eggs in constant movement, whisking in a figure eight motion for 3-4 minutes until eggs are just firm. Take skillet off heat and load eggs onto a toasted bagel. Top with avocado, tomato, and more microgreens. Serve immediately and enjoy!
